Today most dining establishments want you to think that regal dining in Kauai means forking over 40 dollars for toenail sized serving of fish more reminiscent of a Kandinsky painting than a meal. However, if you know where to look, you can enjoy the freshest seafood in the state without having to take out a second mortgage. &lt;br /&gt;&lt;span style="font-weight:bold;"&gt;&lt;br /&gt;Kapaa and Lihue:&lt;/span&gt;&lt;br /&gt;Often when people imagine breakfast on the island, their reveries feature melting ice sculptures surrounded by crab, heaps of pineapple and plates of banana pancakes, accompanied by a $30 a person tab. Instead, follow the locals. In Kapaa, you won’t find a better banana pancake, smothered in homemade piping hot coconut syrup than at Ono Family Restaurant (808-822-1710; 4-1292 Kuhio Highway). &lt;br /&gt;&lt;br /&gt;For lunch, it’s hard to avoid a trip (or three) to Hamura’s Saimin Stand (808-245-3271; 2956 Kress St, Lihue) for huge bowls of noodle soup, lilikoi pie and grilled meat for well under ten bucks. However, if you look a little farther, you’ll find many local favorites. In a little shack on the ocean side of Highway 56 in Anahola, locals line up at Duane’s Ono Charburgers (808-822-9181) for tetherball-sized burgers, addictive fries and marionberry milkshakes.&lt;br /&gt;&lt;br /&gt;Stay nearby at &lt;a href="http://www.oyster.com/hawaii/hotels/aston-islander-on-the-beach/"&gt;http://www.oyster.com/hawaii/hotels/aston-islander-on-the-beach/&lt;/a&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;&lt;br /&gt;South Shore: &lt;/span&gt;&lt;br /&gt;For South Shore breakfast, you are in luck. Here you’ll find the best traditional breakfast on the island at Joe’s on the Green (808-742-9696; 2545 Kiahuna Place). On Sundays locals crowd the patio along the golf course to eat the most authentic loco moco around. &lt;br /&gt;&lt;br /&gt;For lunch and pupus, don’t miss the hole-in-the-wall Koloa Fish Market (808-742-6199; 5482 Koloa Road). They serve up the best poke on the island, fantastic seaweed and macaroni salads, and massive plate lunches to go. &lt;br /&gt;&lt;br /&gt;Stay nearby at &lt;a href="http://www.oyster.com/hawaii/hotels/aston-islander-on-the-beach/"&gt;http://www.oyster.com/hawaii/hotels/sheraton-kauai-resort/&lt;/a&gt;&lt;br /&gt; &lt;br /&gt;&lt;span style="font-weight:bold;"&gt;North Shore:&lt;/span&gt;&lt;br /&gt;A trip to Kauai is not complete without a visit to Kilauea Fish Market (808-828-6244; 4270 Kilauea Lighthouse Road, Kilauea). Locals line up out the door for lunch or an early dinner. Serving up the freshest sustainable fish on the island, you can’t go wrong with an ahi or tofu wrap enjoyed on picnic tables overlooking a meadow. &lt;br /&gt;&lt;br /&gt;Locals and surfers testify that pizza and burritos are the best ways to fill a hungry belly after a long beach day. The sun beats on your back, the water beckons. Then crash. An epic swell—one that has lured daredevils to Kauai since the Tahitians introduced surfing—crushes your hopes of letting your tot (and if you’re really honest, even your timid swimmer of a partner) touch more than a toe in the warm seas. &lt;br /&gt;&lt;br /&gt;However, moms and dads (and weak swimmers) don’t scratch Kauai off your safe swimming vacation lists yet. There are enclosed swimming areas on Kauai, safe enough for you to let Little Amber snorkel while you stick your nose in the latest Dan Brown novel and enjoy your vacation too. &lt;br /&gt;&lt;br /&gt;The Kauai people have a long held respect for the ocean, so in order to give their little keikis a way to cool off in the rough seas, they constructed enclosed swimming areas (with that oh-so-useful lava rock). While you may want to admire the rough seas of Ke’e Beach and Polihale Beach from afar, you can schedule a day (or three) of lounging in the warm waters of the following kid friendly beaches. &lt;br /&gt;&lt;br /&gt; Quite possibly the crowning glory of the Kauai community, Lydgate Beach Park promises plenty of safe swimming opportunities. Strewn along the eastern shores of the island, this park attracts joggers and dog walkers (the beachside trail stretches for miles), picnickers, sunbathers and oodles of kiddos. Chalk up the attraction to these strands as part of the community spirit (Kauai people designed and then spent a weekend constructing the magnificent playground just steps from the sand). Plus, the lava rock enclosed swimming hole makes nascent swimmers, teeny tots and tropical fish spotting snorkelers feel both safe and warm. It’s like a pool in the ocean! Stay nearby at the &lt;a href="http://www.oyster.com/hawaii/hotels/castle-kaha-lani-resort/"&gt;Castle Kaha Lani Resort&lt;/a&gt;.&lt;br /&gt;&lt;br /&gt; Probably the most crowded beach on the island, the ever sunny Poipu Beach Park has plenty of fans for a good reason. Her reputation for being a sunbather’s spot du jour (What more could you want? Great weather, a shave ice truck, close bathrooms, a playground, a restaurant and even some decent surf) is deserved. Throw in a warm enclosed swimming area where you can watch waves pass and swim within feet of monk seals and you surely understand her allure. &lt;br /&gt;&lt;br /&gt; Further south and west, on the sunny side of the island hidden in a salt harvesting region is the aptly named Salt Pond Park. Popular with resting monk seals and sea turtles, plus local picnickers and lap swimmers, this shady (and grassy) beach proves to be a lovely spot to spend a day. As long as you stay away from the monk seals, you can have most of the lava rock enclosed swimming area to yourself. Stay nearby at &lt;a href="http://www.oyster.com/hawaii/areas/kauai/hotels/roundups/best-luxury-hotels-on-kauai/"&gt;Koa Kea Resort Hotel&lt;/a&gt;, &lt;a href="http://www.oyster.com/hawaii/hotels/sheraton-kauai-resort/"&gt;Sheraton Kauai Resort&lt;/a&gt;, or &lt;a href="http://www.oyster.com/hawaii/hotels/grand-hyatt-kauai-resort-and-spa/"&gt;Grand Hyatt Kauai Resort &amp; Spa&lt;/a&gt;. &lt;br /&gt;&lt;br /&gt; If you find yourself tempted to brave the swells at other beaches, be sure to check the surf report. Hurricanes, earthquakes, disease, invasive plants, and of course a less environmental beating (but no more painful) colonialism. And time and time again, she has bounced back, stronger, more humble, and more enriched because of it. &lt;br /&gt;&lt;br /&gt;As I sit in my living room today, three thousand miles from the Garden Isle, watching CNN coverage of the tsunami destined to wash Hawaii's shores, I imagine the people of Kauai as I know them: sitting near Sleeping Giant, banding together, sharing papaya, talking story, and marveling in the power of nature. &lt;br /&gt;&lt;br /&gt;If any people know how to embrace natural happenings (I won't say disasters, it's too early for that), it is island people. After Iniki, the locals gathered together to help rebuild. After the tourist slump, the people hunkered down and tried innovative ways to lure visitors back, and the list goes on. &lt;br /&gt;&lt;br /&gt;I write this not only to send love and strength to all people affected by the Chilean earthquake this morning, but to also remind us all that the power of nature pales by comparison to the power of people in great numbers working together. If there is destruction, we will rebuild. As of Sunday morning, the blaze was 75 percent contained, with a few hot spots still burning. The fire started along Makaha Ridge Road and has burned over 2 miles of pine forest. Throw in 15 miles of white sand that stretches to the western edge of the Na Pali Coast, free camping, intense surf, and even a mellow sheltered reef for keikis. Oh, and did I mention that it is almost always sunny and is Kauai's best place to watch the sunset?&lt;br /&gt;&lt;br /&gt;Now you know why locals are volunteering to help rebuild a washed out bridge that leads to this magnificent beach. Often they are cruise ship visitors with only 8-24 hours to "see" the island. And though I can easily prove that a day is not enough to see the island, it is enough to be become smitten with it. &lt;br /&gt;&lt;br /&gt;Here's how. &lt;br /&gt;&lt;br /&gt;Kauai is different than every other island in that it is lush and looks like that a tropical island is supposed to look like--if you know where to go. Save sunny beaches for Maui ahd Oahu. In Kauai you get to experience the garden isle in all its splendor. &lt;br /&gt;&lt;br /&gt;Start by renting a car through your cruise ship or at the Lihue airport (you can take a cab from the harbor). Every major car rental agency is located at the airport. &lt;br /&gt;&lt;br /&gt;After you have your car, drive north to Princeville (if you are starving, pitstop at Mango Mama's for a fruit smoothie). Head to the Hanalei Bay Resort's Bali Hai restaurant to have breakfast. Though not the best service, the views remind you why South Pacific was filmed on the island. &lt;br /&gt;&lt;br /&gt;Keep traveling north, through the town of Hanalei (you'll be back) to the Limahuli Garden for a tour of native plants. Then drive north until the road ends to stop at the picturesque Kee Beach. &lt;br /&gt;&lt;br /&gt;Venture back through Hanalei, stopping at the surf shops and art galleries. &lt;br /&gt;&lt;br /&gt;When your belly rumbles, head straight to the Kilauea Fish Company for fresh fish wraps and veggie offerings. I wanted to share with you the ideal day in this region. &lt;br /&gt;&lt;br /&gt;6am: Roosters wake you up, just in time for an oceanfront sunrise stroll.&lt;br /&gt;&lt;br /&gt;8am: Get a coffee and pastry at the Grand Hyatt Resort.&lt;br /&gt;&lt;br /&gt;9:30am: Head to Joe's on the Green for loco moco.&lt;br /&gt;&lt;br /&gt;11am: Venture to the National Tropical Botanical Gardens for a tour of the Allerton Gardens. &lt;br /&gt;&lt;br /&gt;1pm: Grab a picnic lunch at the Koloa Fish Market and take it to Poipu Beach. &lt;br /&gt;&lt;br /&gt;4pm: Schedule a massage at the Grand Hyatt Resort Spa: ANARA.&lt;br /&gt;&lt;br /&gt;6:30: Enjoy sunset cocktails at the Sheraton Resort. &lt;br /&gt;&lt;br /&gt;8pm: Trek to Plantation Gardens for gigantic plates of local food in a plantation style house.   &lt;br /&gt;&lt;br /&gt;10pm: Head back to your lodging and relax. Superferry, once a way to travel between the Hawaiian islands without getting on an airplane, has met its demise. &lt;br /&gt;&lt;br /&gt;After protesters on Kauai camped out in front of the vessel on surfboards, halting its passage, this ship has not been running between Oahu and Kauai. Now the State Supreme Court stopped service between Oahu and Maui, siding with environmentalists. &lt;br /&gt;&lt;br /&gt;Locals are rejoicing. Tourists and airplane-ophobes are bummed. They used to be filled with palm leaves, wood, grasses, and sacred objects. Though they may look like a pile of rocks to you, often overgrown by brush or seemingly forgotten, remember that these are religious sites, sacred to Hawaiians. They are fragile and cannot be replaced. So please honor the suggestions listed below. &lt;br /&gt;&lt;br /&gt;▪ View the heiau from the exterior. Do not climb on or over the rock walls, they may collapse. &lt;br /&gt;&lt;br /&gt;▪ Do not excavate, destroy, or alter any historic site on state land or you will be fined $10,000. &lt;br /&gt;&lt;br /&gt;▪ Do not leave offerings or trash at a heiau structure. Ni‘ihau, 17 miles away from Kaua‘i, is an illusive and forbidden land. This privately owned island houses over 200 Hawaiians. &lt;br /&gt;&lt;br /&gt;The majority of the population lives in the community of Pu‘uwai. This is the only island where Hawaiian is the primary language (though children learn English in grade school). Rumor has it this is the only place where some full-blooded Hawaiians still exist. Though a notable irony since the people who own the island are non-Hawaiian. &lt;br /&gt;&lt;br /&gt;Unlike the rest of the archipelago, there is no electricity (but people use power generators for their televisions and refrigerators); no cable TV, phone service, indoor plumbing, wireless, or paved roads. &lt;br /&gt;&lt;br /&gt;For work, the residents farm and create shell necklaces and craftwork that sells for big bucks on Kaua‘i. Unfortunately, the economy is suffering from draughts, hurricanes, and a lessening of ranch activities. There is talk of a bigger military presence on the island to subsidize the economy, and maybe a high-end resort.  But as of now, the land and its people are a pristine example of life without outside influence. &lt;br /&gt;&lt;br /&gt;As a tourist, the only way to visit is by invitation from a local. Otherwise, you have to settle with diving off shore or taking a helicopter tour over the uninhabited edge of the island. &lt;br /&gt;&lt;br /&gt;It seems to this traveler that there is something special about the isolation of Niihau. No other Hawaiian island has been able to retain its soul in quite the same way--and for that we might be able to appreciate the fact that we are not quite wanted there. Spread throughout the east, south, and north shores, you’ll find a condominium option for nearly every price range. Last Friday, I attended Brother Noland's show (because my friend Verge was playing) and was reminded of why Hawaii is such a unique place. &lt;br /&gt;&lt;br /&gt;Prior to the show, we were all sitting upstairs nursing our drinks, when Brother Noland commented that in the end music will bring us all together--it has in the past and will carry us through the current cloud hanging over us all. &lt;br /&gt;&lt;br /&gt;And it dawned on me that we all need to offer ourselves a dash of goodness, especially now, when the newspapers are filled with doom and gloom. &lt;br /&gt;&lt;br /&gt;So when I looked around Gordon Biersch, I noticed that most of the people in the lofty restaurant were smiling--something you don't often see on the Muni or BART. And my Hawaiian friend Verge said, maybe we need to give people leis more often, reminding them that the Aloha Spirit can exist, even when we are not in Hawaii. &lt;br /&gt;&lt;br /&gt;So here's my little call to you all: After reading the Sunday paper, or after not sleeping enough, or losing your job, or, heck, after a crappy day at the office, even if you can't afford a trip to the islands, allow yourself to honor the aloha spirit for a few minutes each day. Basically--be nice to yourself, listen to Hawaiian music, and treat yourself to a lei from a local flower shop. You can be like many others before you and get married on Kaua‘i. Though most locals head over the Las Vegas to exchange vows, heaps of mainlanders have made Kaua‘i the wedding destination of choice. Since this is an already paved road, there is a big business set up to help with wedding plans—from coordinators to florists, DJs to luau organizers, folks who will marry you in the sky, underwater, as well as sunrise weddings along the Coconut Coast. Basically anything you can imagine has been done. For a price. Like with any other popular destination wedding locations, when people hear weddings, the dollar signs pop up in their eyes. &lt;br /&gt;&lt;br /&gt;For a traditional wedding package, organized through any of the major resorts, expect to pay a lot, but not have to do much work. Each resort has a variety of packages, including intimate affairs of candlelit dinners on the sand to blow out parties for every person you know. The resorts that specialize in weddings are the Waimea Plantation Cottages, Grand Hyatt Resort, Princeville Hotel, Hanalei Bay Resort, Hanalei Colony Resort, Sheraton Kaua‘i, and the Lihu‘e Marriott.&lt;br /&gt; &lt;br /&gt;Many of my friends have chosen to stitch together an affair on their own. Unless you are local (or plan to live on the island until your wedding), most people recommend getting a wedding coordinator. The Kaua‘i Visitor’s Bureau (808-245-3971; www.kauaidiscovery.com) has a comprehensive listing of wedding service providers both online and in their travel planner. Some coordinators popular with tourists are:&lt;br /&gt;&lt;br /&gt;A Vow Exchange: (800-460-3434; www.vowexchange.com).&lt;br /&gt;&lt;br /&gt;Island Weddings and Blessings: (808-828-1548; www.weddings-kauai.com).&lt;br /&gt;&lt;br /&gt;Rainbow Weddings and Celebrations: (808-822-0944; www.rainbowweddings.com). They also perform commitment ceremonies for gay and lesbian couples. &lt;br /&gt;&lt;br /&gt;If you choose to skip the whole coordinator thing, you might want to explore the Kaua‘i Wedding Professionals Association (www.kauaiwedpro.com) website for information about locations, caterers, florists, photographers, carriages, tent rentals, etc. The Yellow Pages offers comprehensive listings of wedding services, including the above-mentioned information, officiates, churches, rehearsal dinner locations, musicians, and more. It is important to note that if you want a friend or family member from the mainland to perform your ceremony, you must also hire a locally certified officiate to preside over the event (and make it legal). &lt;br /&gt;&lt;br /&gt;So what happens if you arrive here and are swept away by the romance of the isle and decide at the last minute to get hitched? Plan to stay a few extra weeks because Hawai‘i has some strict licensing requirements. Though no blood tests are required, both parties need to be present (with cash in hand and valid ID) before the date of the wedding at the Kaua‘i Governor Liason’s Office (808-274-3100; www.hawaii.gov/health). You must make an appointment (and often they only accept them two weeks prior to the event) with an agent to sign the appropriate papers. It's tough. It's ridiculously beautiful. And did I mention that it is tough? &lt;br /&gt;&lt;br /&gt;Yesterday I read that a tourist, who was attempting to hike the whole way, got seriously hurt 3 miles in and had to be airlifted out. Now, you might read this and call it a fluke, but there is a reason that lepers hid out here; why locals rarely trek this treacherous path; and why the visitor's bureau is struggling with what to do about this major tourist destination. People keep getting hurt here and yet people keep flocking to the trail.&lt;br /&gt;&lt;br /&gt;Connecting Kee Beach and Kalalau Beach, passing epic waterfalls, and winding above the Pacific along the Na Pali Coast sounds like the perfect dreamy hiking adventure. But throw in rain (and there is a lot on the north shore) and an unkempt trailhead and you have the recipe for a lot of haoles heading to the hospital. &lt;br /&gt;&lt;br /&gt;Why only haoles? Because we don't seem to understand (and often we don't respect) the moody weather and land of Kauai. Rather, we pack our vacation chock full of adventures with only one day scheduled for the Kalalau Trail and end up going on a hike regardless of weather, timing, or your health. &lt;br /&gt;&lt;br /&gt;Now, I have never completed the entire 11 mile (each way) trail. The last time I attempted, I was 6 months pregnant, made it 2 miles in, and decided to head back. I recommend this shorter length for day use hikers. But if you insist on going the whole way, here are a few tips that will save you an unlucky hiking experience: &lt;br /&gt;&lt;br /&gt;1. Plan to arrive at the trailhead no later than 6am. If you get there later than 8am, you will be hiking in the full sun and have a higher chance of meeting rain. Plus, the masses arrive around 9am and any essence of privacy will be lost. &lt;br /&gt;&lt;br /&gt;2. If it rained the day before (or if there is any chance of rain in that day's forecast) DO NOT HIKE. &lt;br /&gt;&lt;br /&gt;3. Bring plenty of water and food. There is no snack stand at the end of the trail. And it is 11 miles back too. &lt;br /&gt;&lt;br /&gt;4. Pack out all of your trash. &lt;br /&gt;&lt;br /&gt;5. Wear sunscreen and mosquito repellent. &lt;br /&gt;&lt;br /&gt;6. Go with a hiking buddy. &lt;br /&gt;&lt;br /&gt;7. Wear good hiking shoes--this is not the spot for flip flops. &lt;br /&gt;&lt;br /&gt;8. Go slow. The views are spectacular and worth the extra time of negotiating those unstable tree roots. &lt;br /&gt;&lt;br /&gt;9. Be ok with turning back earlier than you would on a hike at home. Most of us are not used to the tropics and might push ourselves past the point of safety. As I am told, it is just as beautiful at mile 1 as mile 11. &lt;br /&gt;&lt;br /&gt;10. Pat your self on the back for whatever part of the trail you accomplished. Not only is it located on an ancient heiau (sacred space), but they also specialize in native plants to Kauai--a rarity on the islands. On a recent trip through this collection, I learned more about nature than I ever have on a trip to the islands. Consider this: if a plant flowers, it is not native to Kauai. I told you it was informative!&lt;br /&gt;&lt;br /&gt;Plus, there is no better place to whale watch and space out on the ocean that spread below this dramatic landscape. &lt;br /&gt;&lt;br /&gt;Though the cost can be steep ($15 for a self guided tour and $30 for a guided tour--which I highly recommend). There's a reason that Hawaii's lisence plate has a rainbow on it; why "Somewhere Over the Rainbow" has become sort of a Hawaiian anthem; and why the islands are so green. Rain happens. Often at the most undesireable moment: just when you arrive at the beach or right before you set out to hike the Hanalau Trail. &lt;br /&gt;&lt;br /&gt;Coming from the mainland in winter, it is tough to accept the rain. We want sun, beach and to wear a skimpy dress at night. But the rain is part of the allure. Over the years, I have come to accept and even love rainy days on Kauai. What better excuse to curl up with a book on my lanai (it's not like it gets cold), play games with the family, and just relax. Often when we go on vacation, we feel the need to fill our calendars up with constant events and it is nice to have a reason to stop, slow down and just be. Try watching the rain land on a banana leaf; hearing the birds sing just before a storm; hunting for rainbows over the sea; smelling the wetness as it feeds the trees and even taking a little walk in a downpour. What better way to experience nature. &lt;br /&gt;&lt;br /&gt;And my little packing tip: make sure to take a good book, a deck of cards and an affable attitude towards the rain. Patrick says, "We’re starting to limit the access to the upstairs and it’s resources. In response to this, we have made the suites more self sufficient and added many amenities.  We still plan to have the guests upstairs for breakfast and our world class concierge service!!!" &lt;br /&gt;&lt;br /&gt;Patrick and Jules still offer guests the only bed and breakfast located oceanfront in sunny Kekaka (one of the most private white sand beaches, with some of the best sunset views). With Hawaiian framed pictures accenting simple white (600 threadcount) bedding and hardwood floors, guests find rooms comfortable, yet decorated with high-end touches. The suites each have a TV, refrigerator, fresh flowers, and a private bathroom (with lovely lotions and soaps). Patrick and Jules built a communal outdoor grill/kitchen area with views of the ocean. There is also an outdoor shower surrounded by fruit trees. When guests arrive, they are greeted with leis, a smoothie, and lots of assistance from the kind owners (who are great resources about where to surf). Each morning guests sit on the large lanai, staring across the Pacific at Ni‘ihau, to eat a continental breakfast. &lt;br /&gt;&lt;br /&gt;The B&amp;B is only two miles from Waimea town, yet it feels like you have found a remote paradise, far from the tourists in Poipu, yet with better weather and surf. Upon waking, I read a quote that appears in most holy books about humans being caretakers of the earth, not masters. And both made me think about Kauai--about those epic sunsets and waves, the reefs (that friends say are bleaching quicker than you can eat a plate lunch), those peaks of mountains, sleeping giant and the Kalalau Valley that has both shielded humans from harm and brought about countless deaths. I imagined the view from the top of Kokee, a hike in the redwood forest, dipping my toes in Kee Beach. Then I envisioned the alii royalty canoeing up the Wailua River from Heiau to Heiau, ignorantly killing off bird and plant species and I realized that it is our time to evolve.&lt;br /&gt;&lt;br /&gt;As lovers of Kauai, whether it be inhabitants or visitors, it is up to us to care for this land. And there are so many easy ways to do so. Here are some ways we can all help keep Kauai beautiful:&lt;br /&gt;&lt;br /&gt;1. Recycle. OK, so it is a bummer that Kauai places don't automatically recycle, especially since their landfills are filling rapidly. But it is not hard to actually recycle yourself. Here's how to make it worth it. There is a recycle center across the street from Poipu Beach Park--make a day of it: go for a swim, have a drink or a shave ice, go surfing and help save the planet. &lt;br /&gt;&lt;br /&gt;2.  Even better than recycling: bring your own water bottle and refill it; unwrap your packaged toiletries at home. &lt;br /&gt;&lt;br /&gt;3. Limit your driving as much as possible. Rather than staying on the North Shore and driving to the South and West shores a bunch of times, split your trip in half. Even better: Take the Kauai Bus. Talk about a cultural education. &lt;br /&gt;&lt;br /&gt;4. Before hiking anywhere, clean the bottom of your shoes. Invasive plants hurt the endemic plants of the island. And since Kauai has one of the highest rates of native plants and animals, it is our job to help sustain them. &lt;br /&gt;&lt;br /&gt;5. Buy local. The Kauai farmers markets rock. You'll find head-sized avocados, homemade banana bread and super sweet bananas. And supporting local farmers helps keep locals in business. &lt;br /&gt;&lt;br /&gt;As caretakers of this land, we need to govern ourselves, making sure we don't take too much without giving a little back. When I first started writing this book, I researched all the other Kauai guides on the market. A common theme I found was this idea of showing travelers all the "secret spots" without taking into account the effect of hordes of tourists trampling the land.  This trend has upset locals enough to resent tourists. This, of course, is a catch 22, because the main economy on the island is tourism. &lt;br /&gt;&lt;br /&gt;So how do locals and tourists negotiate this love hate relationship when guidebooks are constantly telling tourists to go to spots that are privately owned and downright dangerous (I won't even go into the numerous deaths that have occured when a certain colorful guidebook told tourists to visit a very treacherous, unkempt path)? Now, I understand wanting to visit a place and know it like a local, but Kauai is a fragile environment with only 5 percent of the island accesible by car. On this island you can find plants and animals that are not found anywhere else on the planet. And since the people who have lived there lives on the island need the land to continue to thrive, it is imperative that visitors respect their wishes. This is why I took a different route with GREAT DESTINATIONS KAUAI. &lt;br /&gt;&lt;br /&gt;Because I love Kauai, because I want my son to experience this island in all its glory, I wrote a book urging tourists to understand the impact of their footprints on the island. So what does that mean? Well, Kauai needs tourists to keep its economy strong. So we mainlanders need to keep returning. But we also need to visit in a responsible way. &lt;br /&gt;&lt;br /&gt;Knowing how to be responsible the the first step. In GREAT DESTINATIONS KAUAI I have highlighted locally owned businesses (including hotels and inns, restaurants, and activities), recycle centers (yes you have to drive your bottles and cans to a bin, but most are right near a beach), organic and sustainable restaurants, and hikes that are safe (and legal). Sure, every guidebook tells you how to get there, making it sound so wonderful that it is impossible not to put it on your itinerary. However, so many tourists have been injured at this locally favored swimming hole that I decided not to include the falls in my book. Well, sort of. Rather, I included a zip line tour that takes you to the falls with a local who understands the water flow and moods of the falls. If you want to come here, sign on with the zip line adventure tour at Outfitters Kaua‘i (808-742-9667; www.outfitterkauai.com).&lt;br /&gt; Here’s the issue: locals have been trekking on private property to get to the falls for years and it turned up in a particular blue covered guidebook (one that has locals reeling) and suddenly heaps of mainland tourists followed the worn path to the waterfall. Now, locals are mad because this was one of their favorite secret spots to escape the masses. But more than that, imagine if you were chilling at a waterfall with your family, drinking beer and lazing in the shade and suddenly some silly tourist jumped into the water below at the wrong spot, hitting his back on a jagged rock and totally wrecking your buzz. That happens about once a month at Kipu Falls. &lt;br /&gt; Ultimately it is for your safety that no one, not locals, not the folks who own the property, and surely not little ole me, wants you to find this waterfall. You might be thinking, "It is pretty serious around my house come 7am." But us lucky mainlanders get to press a button and have that black gold percolated in minutes, rarely do we consider where those beans come from and how they get from the plant to cup. A visit to Kauai offers visitors the chance to learn about coffee in detail with visits to two working coffee plantations. &lt;br /&gt;&lt;br /&gt;Just south of Poipu, in Kalaheo, is the Kauai Coffee Estate. Besides being the best place to taste a number of freshly roasted local blends for free, you can also tour the estate and see how the coffee bean is processed (also for free). Afterwards, with views of the coffee trees and the ocean beyond, you'll sip vanilla mac nut flavored coffee and probably buy some beans to take home. The owner consistently wins barista awards--and they use Barefoot Coffee Roasters--a NorCal favorite. Today most dining establishments want you to think that regal dining in Kauai means forking over 40 dollars for toenail sized serving of fish more reminiscent of a Kandinsky painting than a meal. However, if you know where to look, you can enjoy the freshest seafood in the state without having to take out a second mortgage. &lt;br /&gt; Often when people imagine breakfast on the island, their reveries feature melting ice sculptures surrounded by crab, heaps of pineapple and plates of banana pancakes, accompanied by a $30 a person tab. Instead, follow the locals. In Kapaa, you won’t find a better banana pancake, smothered in homemade piping hot coconut syrup than at Ono Family Restaurant (808-822-1710; 4-1292 Kuhio Highway). Or if you want a real treat, on weekends, brunch at Blossoming Lotus (808-822-7678; 4504 Kukui Street)&lt;br /&gt;can’t be beat; here you can dine on vegan delicacies like dal or buckwheat pancakes and a smoothie for half the price of big hotel brunches. Up on the North Shore, surfers head to Hanalei Wake Up Café (808-826-5551; 5-5140 Kuhio Highway) for a mouth-watering mac-nut cinnamon roll or breakfast quesadilla. Finally if you are staying on the South Shore, you are in luck. Here you’ll find the best traditional breakfast on the island at Joe’s on the Green (808-742-9696; 2545 Kiahuna Place). On Sundays locals crowd the patio along the golf course to eat the most authentic loco moco around. &lt;br /&gt; For lunch, it’s hard to avoid a trip (or three) to Hamura’s Saimin Stand (808-245-3271; 2956 Kress St, Lihue) for huge bowls of noodle soup, lilikoi pie and grilled meat for well under ten bucks. However, if you look a little farther, you’ll find many local favorites. In a little shack on the ocean side of Highway 56 in Anahola, locals line up at Duane’s Ono Charburgers (808-822-9181) for tetherball-sized burgers, addictive fries and marionberry milkshakes. When you are on the South Shore, don’t miss the hole-in-the-wall Koloa Fish Market (808-742-6199; 5482 Koloa Road). They serve up the best poke on the island, fantastic seaweed and macaroni salads, and massive plate lunches to go. &lt;br /&gt; A trip to Kauai is not complete without a visit to Kilauea Fish Market (808-828-6244; 4270 Kilauea Lighthouse Road, Kilauea). Locals line up out the door for lunch or an early dinner. Serving up the freshest sustainable fish on the island, you can’t go wrong with an ahi or tofu wrap enjoyed on picnic tables overlooking a meadow.&lt;br /&gt; For dinner, most tourists head to those candlelit seafood restaurants around the hotels. And while many of them are worth the hefty price tag, you can eat just as well for a quarter of what they will pay. Locals and surfers testify that pizza and burritos are the best ways to fill a hungry belly after a long beach day. On the North Shore locals favor the fresh (and huge) slices at Kilauea Bakery and Pau Hana Pizza (808-828-2020, Kong Lung Center, Kilauea). While South Shore folks head to Brick Oven Pizza (808-332-8561; 2-2555 Kaumuali‘i Highway, Kalaheo) for huge garlic-crusted pies in a lively setting, smothered with fresh veggies. Around Kapaa, Monico’s Taqueria (808-822-4300: 4-356D Kuhio Highway, Kapaa) does the trick, dishing up authentic Mexican delights in a strip mall in Wailua. &lt;br /&gt;By day three papaya and banana yogurt breakfasts on the lanai of our condo wasn't a rushed affair, especially as we got to know the various birds hanging out in the garden. Our day usually consisted of me visiting hotels in the morning while mom worked, meeting for lunch and then having some sort of an afternoon adventure--a walk to a waterfall, a trip to Waimea Canyon, a visit to the botanical gardens. So when I asked my mom if she wanted to join me on a trip out to Polihale Beach, a little known tourist destination, yet one of the most stunning beaches in the state, she readily agreed. &lt;br /&gt;&lt;br /&gt;Let me preface that with our rental car, we probably shouldn't have considered a trip to Kauai's outback. But we were troopers (and ignorant Californians--one pregnant and the other just happy to be in Hawaii again). We decided to pull over near a beach before making the trek to Polihale so I could take a picture. So mom drove our Cutlass into the sand where a number of 4 wheel drive trucks were parked. When I indicated that I wanted to go in another direction, she tried to reverse the car but the wheels were stuck in the sand. &lt;br /&gt;&lt;br /&gt;At this point, the local dudes drinking beer by their trucks had started paying attention (read: pointing and laughing). I got out of the car, red faced and shamed, not sure what to do. With every attempt to get the tires free, my mother was getting the car stuck deeper in the sand. &lt;br /&gt;&lt;br /&gt;I couldn't bear walking up to the locals to ask for help, since I know many locals disapprove of haoles (white folks) over-visiting their land. But my mom stuck her acrylic nailed hand with the giant diamond on it our the window and said, "Excuse me, can you help a poor LA lady?" &lt;br /&gt;&lt;br /&gt;No less than ten bare-chested tan Hawaiian men strolled slowly over to the car. Split into equal camps--of supportive, "Well done ladies" and annoyed "Stupid haoles"--the guys started to plot how they could help. At first a couple started pushing the car while my mom reversed. After getting mouthfuls of sand, a guy grabbed a chain from his truck and strapped it on the wheel, pulled his truck over and clipped it on the back and swiftly towed the car our of the sand. &lt;br /&gt;&lt;br /&gt;Mom and I cheered like knock-kneed school girls. Effusive in our praise, we promised cases of beer (which we later brought) and good karma to come their way. Of course as we drove away, we could still hear them laughing at us silly gals. But one thing is for sure, I have been in trouble in major US cities, waiting for someone to pull over and help and no one ever did. You can actually fly to Hawaii for less than $500 RT from the west coast! &lt;span style="font-weight: bold;"&gt;HAWAIIAN AIR &lt;/span&gt;(hawaiianair.com) has a decent sale going on. Just make sure you are traveling mid-week, over a weekend and returning on a Tue or Wed. and you are &lt;span style="font-style: italic;"&gt;not&lt;/span&gt; trying to go over the holidays. So as all about-to-be rotund women do, I freaked. I started calculating how I could possibly write a book and be a spaced out breeder at the same time. &lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;div&gt;I should clarify with this aside, I do not live in Kauai nor in Hawaii. Rather I abide in San Francisco. But I have traveled to over 30 countries and spent a ridiculous amount of time on the Hawaiian islands. It is fair to say that a good writer can capture the essence of a place, without living there. In fact, some of the best guidebooks I have read come from folks who travel to a place more than they have lived there. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;That being said, I assure you that I researched the heck out of Kauai--and aside from a couple guidebook writers who I won't mention, I know more about Kauai than my little brain can handle. Which is why I am imparting my knowledge to you. &lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;I also want to clarify that my book is not one of those &lt;span class="Apple-style-span" style="font-style: italic;"&gt;how to reap the benefits of the culture books and see every secret beach&lt;/span&gt;. Instead, because I love Kauai, I wrote a book that actually guides people to understand the impact of their footprints on the island. Without preaching, I want to encourage visitors to respect this fragile environment, so that my son can enjoy it as much as I do. This means you won't read about secret beaches or waterfalls in my book.
